something tasty and easy for a Sunday dessert

Mango Raspberry Crisps
(Cuisine at Home – Issue 63)
Serves 4
Mango filling

1 lb. frozen mango diced into 1” cubes (about three cups)
1 T. sugar
1 T. cornstarch
Juice of ½ lime
Pinch of salt

Topping
1/3 c rolled oats, processed into a powder
¼ cup sugar
3 T. all-purpose flour
Pinch of salt
3 T. unsalted butter cold, cubed
¼ cup sliced almonds
1 t. almond extract
Egg white
½ cup frozen raspberries

Preheat oven to 350, line a baking sheet with aluminum foil

Toss the mango with sugar, cornstarch, line and salt.  Set aside

Combine the oats, sugar, flour, and salt.  Cut in butter until mixtures resembles a coarse meal. 

Add almonds and extract and blend to break up nuts slightly.

Whisk egg white until frothy in a bowl and add half of it to the oat mixture, using a fork to blend.  Discard the rest of the egg white.

Divide the mango mixture among four over-proof dishes.  Sprinkle each with some of the raspberries, the top with oat mixture.

Bake on the prepared baking sheet for 40-45 minutes or until the topping is golden and fruit is bubbling.  Cool slightly before serving
