My recipe for my frozen cranberry salad.
1 bag fresh cranberries-cooked per package directions.
1-8oz can crushed pineapple.
2 c mini-marshmallows.
3/4 c chopped walnuts.
2-3 c whipped cream. Should be a dark pink when mixed.
Do not drain anything. Throw it all together in bowl. Blend well. Put in glass baking dish. Cover well. Freeze about 24 hours before serving. This should serve 8-10. You can cut into squares and serve from baking dish. Put leftovers, covered, back into freezer.
2-14oz cans Ocean Spray Cranberry Sauce - Whole Berry.
Pecans instead of walnuts.
Cool Whip instead of homemade whipped cream.
Recipe for whipped cream-Just right amount for salad:
1 c heavy whipping cream
1/4 c sugar
1 t vanilla
Whip the cream till almost stiff.
Add sugar and vanilla.
Beat till stiff peaks form and hold shape.
