Strawberries with mascarpone and basil cream
I found a recipe more or less simiar to mine. The lady suggests some modifications at the end of the recipe...
500 g very sweet, medium-sized strawberries
1 - 1,5 tbsp icing sugar
1.5 tbsp raspberry vinegar (red wine vinegar)
Wash the berries, remove the stems, halve the berries and place in a bowl
Combine the icing sugar and vinegar and add it to the strawberries, stir gently and leave to chill for 30 min in a fridge
125 g mascarpone cheese
100 ml cream 25% fat
1 tbsp icing sugar
50 ml chopped basil leaves
In a bowl combine the mascarpone and cream, add the icing sugar and beat together
Add the basil and stir well
Serve the strawberries topped with the cream
I used the passion fruit juice instead of the vinegar. Also I took fromage blanc instead of mascarpone. I think that 50 ml of the chopped basil (its about 20 large basil leaves) is a bit too much, the cream turned to have an overpowering basil flavor. I took a bit less.
