Lemon Pecan Bread

This is a sure winner for your next special Sunday brunch




Lemon Pecan Bread

1/3 cup melted and cooled butter
1 cup sugar
3 T. lemon extract
2 large eggs
Rind of one lemon (reserve juice)
1 ½ cups flour
1 t. salt
1 t. baking powder
½ cup milk
½ cup pecans

Preheat oven to 350
Butter standard loaf pan and line bottom with waxed paper. Mix first five ingredients. Stir together ingredients and them add to sugar-butter mixture. Add milk and stir to combine. Fold in pecans. Do not over mix.
Pour into loaf pan and bake for 50-55 minutes
Topping ingredients
Reserved juice
½ cup powdered sugar
Combine juice from lemon with powdered sugar. After removing the loaf from pan, pour lemon juice mixture over warm loaf slowly until all of it has soaked into the bread. Wrap loaf in plastic wrap
Makes 12-15 servings

I need to go for a bit.  Get dressed and ready to teach Sunday School.
Then it's eat lunch and go to bed before work tonight.  Might be able to stop in quickly.  Will jump on around 10pm-ish my time.  The kitteh will stand in for me.

Just right for sandwiches

Big Island Panilo Tri-Tip Steak
2 t. rock salt *
2 cloves garlic, minced **
2 t. minced fresh ginger root ***
1 T. soy sauce
1 T. brown sugar
1 t. sesame oil
Pepper to taste
1 ½ pds tri-tip steak

In a Ziplock plastic bag (large enough to accommodate your steak) combine all the ingredients, except the steak and mix well. Add the steak and close. Massage the mixture into the steak and allow it to marinate for an hour. Preheat your grill or your oven to broil. Grill (or broil) to your preference.

* Don’t substitute regular salt for this or your steak will be too salty.
** You can substitute 1 t. dried mince garlic if you prefer.
*** You can use 2 t. of ginger powder, but the fresh root is better

Phew sorry I'm late but Livejournal isn't cooperating this afternoon. Anyway I brought my world famous in Eagle Mills (my home town) no peels and citron, white fruitcake with marzipan and heavy on the butter buttercream icing, decorated with glaceed cherries and candied green pineapple.
I have cookies, too. (peanut butter with miniature Reese's peanut butter cups, almond spritz, and Russian Teacakes.)

Oh and miniature crab cakes with remoulade sauce.

I went to add my food to the tables and got distracted by the blonde guarding the food.  ;-)

I've brought a bit of Tex-Mex to add to the array!  There's nine layer dip and tostado chips as well as chicken enchilada soup.  The peanut butter balls are by the other sweets.

This year I've been busy!

In November I bought porn for avery11 (-10 points). In October I gave spook_me a life-saving blood transfusion (50 points). In January I saved a busload of nuns in Angola (326 points). In July blackillya and I donated clothes to the needy (11 points). Last Wednesday I ate my brussel sprouts (1 points).

Overall, I've been nice (378 points). For Christmas I deserve a red Radio-Flyer wagon!

Chili's Chicken Enchilada Soup

Chili's Chicken Enchilada Soup



12 Servings



1 T vegetable oil
1 lb. of chicken breast fillets
1/2 C diced onion
1 clove garlic, pressed
4 C chicken broth
1 C masa harina
3 C water
1 C enchilada sauce (non-spicy)
16 oz Velveeta
1 t salt
1 t chili powder
1/2 t cumin

1.  Add 1 T of oil to a large pot over medium heat.  Add chicken breasts to pot and brown for 4-5 minutes per side.  Set chicken aside.

2.  Add onions and garlic to pot and sauté over medium heat for about 2 minutes or until onions begin to become translucent.  Add chicken broth.

3.  Combine masa harina with 2 C of water in a medium bowl and whisk until blended.  Add masa mixture to pot with onions, garlic, and broth.

4.  Add remaining water, enchilada sauce, cheese, and spices to pot and bring mixture to a boil.

5.  Shred the chicken into small, bite-sized pieces and add to the pot.  Reduce heat and simmer soup for 30-40 minutes or until thick.

6.  Serve soup in cups or bowls, and garnish with shredded cheddar cheese and crispy corn tortilla strips.  You could add pico de gallo to your garnish, but I don't like it so I never do.

Last Sunday I caught a purse-snatcher who stole st_crispins's purse (30 points). Last Friday I got in line at the supermarket at the same time as someone else and I didn't yield (-8 points). In April frau_flora and I donated clothes to the needy (11 points). In October I gave sparky955 a kidney (1000 points). In June I gave nsandik a wet willie, then I took it back (-5 points).

Overall, I've been nice (1028 points). For Christmas I deserve a shiny red ball!

We had snow here today...

...so I bring Snow Cream to the party, for dessert!

SNOW CREAM

4-6 cups of clean, fresh snow
about 1 cup of milk and/or almond milk. Mix if you'd like!
1/3 to 1/2 cup of white sugar
about 1/2 teaspoon of vanilla extract

Mix the milk, sugar, and vanilla together until the sugar dissolves. Then add the snow like two cups at a time until it gets to an ice cream-like consistency. Serve immediately!

It's fun for kids (and the young at heart).

We probably had about four inches in my little village, a lot more in Madison, though. Just trying to keep warm and in the holiday spirit. :D

I bring you a delicious beverage Coquito.

Salud and Feliz Navidad to you all!

Coquito is an eggnog-like alcoholic beverage traditionally served in Puerto Rico. It is made with rum, egg yolk, coconut milk, coconut cream, sweet condensed milk, cinnamon, nutmeg, and cloves. The drink is commonly associated with the Christmas holidays, where it is traditionally served along with other holiday food.
