Au Gratin Potatoes
This is my grandma's recipe, which we had for lunch today along with sauteed pork chops and Lima beans. I actually made them yesterday, refrigerated over night and baked them at 400 F for about half an hour rather than using the broiler and it worked just as well.
3 cups Ore Ida hash brown potatoes, plain
1 1/2 cups half and half
2 Tablespoons butter
1/2 cup shredded cheddar
1/4 cup grated Parmesan
salt and pepper to taste
Thaw potatoes to room temp and sop up excess water. Bring half and half to boil in heavy sauce pan. Add thawed potatoes, butter, and seasonings. Simmer slowly until thickened. Fold in cheese gently. Pour into a greased baking dish and sprinkle with Parmesan cheese and a little more butter. Place under broiler to brown.
More half and half may be needed if the potatoes absorb it too rapidly. More cheese is always a good thing. ;)
