Biscuits and Gravy
This is one of those fall-back recipes that doesn't require much thought (at least on my part) to make. It's fast, satisfying, and easy. Apologies to anyone from the South - this is my very Yankee version of a tradition Southern dish
1 package of Jimmy Dean sausage (I use the light recipe, but all of them work just fine)
2 onions roughly chopped.
2-3 T. butter
3 T flour
3 cups milk (I use non-fat, but again, any kind works)
Salt to taste
Pepper to taste
1 recipe of your favorite biscuits. (baked and held ready)
Parsley (optional)
Paprika(optional)
In a large frying pan, pan fry the sausage and onions until sausage is thoroughly cooked through and onions are soft.
Melt the butter in the pan and add the flour, stirring to mix. As you still have the sausage and onions in the pan, make sure that it's all well incorporated.
Heat 2 cups of milk in the microwave until hot and add to pan. When mixture starts to bubble, add the last cup and continue to stir. Mixture will thicken as it cooks, approximate 3 -4 minutes.
Split two biscuits and ladle the gravy over the top. Sprinkle with parsley and paprika and serve.
