A few days ago, the canteen featured a very unusual looking cake … Salted Caramel Apple Snickers …l
It looked like a fun cake for autumn, so I looked up the recipe, which you can find here:
Looks and sounds lovely … except for the part where a small slice has close to 1000 calories. And the part where the three layers of frosting / topping (snickers frosting, a thick chocolate ganache plus a layer of melted caramel) might put most people in a diabetic coma.
So I decided to try it with a bit less topping. I made the cake in a 13 x 9 pan and topped it with a simple caramel frosting.
It’s a very intensely chocolate cake. Really, really intensely chocolate, dense and moist. A little oddly, despite being made with both applesauce and apple cider, there’s no particular apple flavor. But it’s a good cake, and I suspect this version has quite a few calories fewer than the original.
I don’t eat much cake myself, but everyone in the household liked it. And it gave them all something to smile about when the power went out (thanks, Ian) for almost 24 hours after I finished making it.
